14 ounces of evaporated milk
6 ounces of chocolate chips
10 ounces of mini marshmallows
1/2 c. unsalted butter
one 3-ounce can coconut flakes
2 c. graham cracker crumbs
1 c. chopped pecans
1/2 gallon of high quality vanilla ice cream

Directions:

1: In a medium saucepan place the evaporated milk, chocolate chips, and marshmallows. Heat and stir until all ingredients are melted and blended, then cool.
2: In a small saucepan melt butter. Add coconut flakes and stir constantly over low heat until lightly browned.
3: In a large bowl, stir together the graham cracker crumbs, pecans and toasted coconut.
4: Generously butter a 9 x 13 inch baking pan. Spread three-quarters of the graham cracker mixture across the bottom and the sides. If your vanilla ice cream is in a rectangle shape, cut it in slices and layer them over the crust. If the ice cream is in a tub, allow it to soften, then spread a 1/2 inch or so layer over the crust. Pour some of the cooled chocolate mixture over the ice cream layer. Repeat with another layer of ice cream and another layer of the chocolate mixture, topping it all off with the remaining graham cracker mixture. Place in the freezer for a few hours or overnight.
Remove from freezer and allow to soften up a few minutes before cutting into squares.

This dessert is so incredibly good. The first time I ever tasted it was when I went to dinner with my parents at Mary and Frayne Toll's house in Shawnee. My mom got the recipe that night and it became one of my faves!
