2 c. sugar
4 eggs (beat in 1 at a time)
1 c. vegetable shortening
3 c. flour
1/4 t. salt
1/2 t. soda
1 c. buttermilk
2 T. vanilla
2 T. lemon juice and grated lemon rind

Directions:
Directions:
Place sugar and shortening in a large mixing bowl and beat until well blended. Add the eggs one at a time. Add flour, salt and soda, blending well. Add buttermilk, vanilla, lemon juice and grated lemon rind, beating well.
Pour into a greased and floured tube/Bundt cake pan. Bake at 350 for 1 to 1 1/4 hour. Allow to cool fully, invert onto a cake plate and sprinkle with powdered sugar.

This was my mom's "go to cake", the one she could always throw in the oven and everyone would love it. It makes an awesome base for fresh sliced strawberries and whipped cream.
And it's also pretty great toasted with a little butter.
