3 egg whites
1/2 t. cream of tarter
1 c. sugar
8 crushed soda crackers (single squares)
1 c. chopped nuts
1 t. vanilla
1/2 pt. whipping cream
6 ounces of pineapple preserves
1 can angel flake coconut

Directions:
Directions:
Butter a 9x13 glass plan very well. (You can use a smaller pan and have a thicker dessert if you like.)
Beat egg whites until foamy; add cream of tarter and beat until stiff. Add sugar a little at a time. Fold in cracker crumbs, nuts, vanilla. Pour into pan and bake at 325 for 35 minutes; cool completely. Whip cream, then fold in pineapple preserves and spread over the cooled crust. Sprinkle with coconut and chill several hours.
