Orange Poppyseed Salad Recipe

1 egg white
1/4 cup sugar
1 cup sliced almonds
2 tablespoons butter

1 head bibb lettuce
1 head leaf lettuce

1 can mandarin oranges drained
1/2 pound fresh strawberries, sliced
1 green onion

3/4 cup olive oil
1/4 cup red wine vinegar
1 teaspoon grated orange rind
1 tablespoon I fresh orange juice
1/2 teaspoon poppyseeds
1/8 teaspoon each - salt & pepper

Beat egg whites until foamy. Add sugar, 1 teaspoon at a time. Beat until stiff. Fold in almonds. Melt butter in 9 x 9 pan. Add almonds and bake for 20 minutes - stirring every 5 minutes. Can be made ahead.
Combine all dressing ingredients.
