1 (13 oz.) bag of Tortellini
1 red pepper (chopped)
1 green pepper (chopped)
1 small can black olives
1 (12 oz.) package sharp or mild cheddar cheese
Italian Dressing (Paul Newman's or Good Seasons)
4 oz. hard salami (cut into small pieces)
1 can artichoke hearts (chopped)

Directions:
Directions:
Cook Tortellini according to directions on the bag. Drain. Transfer Tortellini into a large bowl. Pour some of the Italian dressing onto the Tortellini and gently stir. Cover and refrigerate for about a half hour. Add all other ingredients and more Italian dressing to taste. Refrigerate for another hour. Serve cold.

You can add anything you like to this salad. If you like onions, add purple onion for more color. You can throw in garbanzo beans, shredded carrots, orange or yellow peppers. I like to make it colorful. Add as much or as little of the ingredients as you like.
