16 Ounces Pork Sausage, Hot, Bulk
3 Bunches Green Onions, chopped into 1/4 pieces, separated
2-3 chicken livers, pureed, optional
1/2 Tablespoon Chicken Bouillon
1 Tablespoon Creole Seasoning
3 Cups Rice, White, cooked

Directions:

Slice green onions into 1/4" pieces separating tops and bottoms. In large Dutch oven sauté sausage on high heat, breaking apart. Add bottoms of green onions and saute for a few minutes. Add chicken bouillon and lower heat and simmer for about 5 minutes. Add chicken livers and cook for about 1 minute.

Turn off heat and mix in Creole seasoning. Add green onion tops and toss in hot meat mixture until just heated through, about 30 seconds. Add cooked rice and mix very well.

The chicken livers will add richness and depth to this dish, but they are not necessary.

Test spiciness by starting with 1/2 tablespoon Creole Seasoning and increase to taste.
