2 tblsp oil
12 chicken thigh pieces
1 tin of tomato soup
1 clove garlic, crushed
¼ cup of white wine or chicken stock
100g small mushrooms, sliced
2 tblsp chopped chives

Directions:
Directions:
Heat oil in a pan, add chicken, cook until well browned, and then drain. Place chicken in a 6 cup capacity ovenproof dish, stir in combined soup, garlic, wine and mushrooms. Bake, covered, in a moderate oven for 1 hour or until chicken is tender and sauce has thickened slightly. Stir in chives just before serving.

This is a quick and easy dish that is always enjoyed. It can be made a day ahead and is suitable to freeze and microwave.
