Ingredients:  
1 lg. can (28 oz) petite diced tomatoes
1 can Rotel – with lime & cilantro opt.
1 can (15 oz.) black beans, drained & rinsed
1 can (15 oz.) black eyed peas, drained
1 can (15 oz.) corn – yellow, white, mixed, or hominy, drained
1 can diced green chilies
1 medium to large onion, chopped
1 green pepper, diced
1 red pepper, diced
1-2 cloves minced garlic
A squirt of lime juice
Cilantro leaves, fresh or dried to taste
½ c. more or less Italian salad dressing

Directions:
Combine ingredients in a large bowl and refrig. to blend flavors. A great healthy salsa when served with baked tortilla chips. Use a variety of bell peppers to add color and flavor.
