3 tbsp. butter or margarine
3 tbsp. flour
1 3/4 c. milk
6 hard boiled eggs, coarsely chopped
4 slices of toast

Directions:
Directions:
In a heavy saucepan melt butter or margarine. Stir in flour. Add milk all at once. Cook and stir until mixture is thickened and bubbly. Cook and stir 1 to 2 minutes more. Carefully stir in eggs; heat through. Serve over toasted bread.

Mommy (Judith Rae) made this for me growing up and I loved it. If you want to get fancy you can add 1/2 tsp. dry mustard and garnish with paprika or parsley.
