1 lb. ground beef
1 lb. breakfast sausage
1 green pepper
1 medium onion (vidalia or sweet)
2 cans creamed corn
2 cans chicken & rice soup
2 cups shredded mild cheddar cheese
1 16 oz. box Ditalini pasta
1/4 c. breadcrumbs

Preheat oven to 350º.

In large fry pan cook ground beef and sausage, drain and set aside.

Cook al dente (slightly undercook) Ditalini pasta to box directions, drain and set aside (do not rinse).

Finely chop green pepper and onion and saute in medium to large frypan with cooking spray or extra virgin olive oil until tender.

In large mixing bowl combine meat mixture, pasta, green pepper and onion, canned corn and soup.

In 13" x 9" casserole dish spread mixture evenly. Top with breadcrumbs and shredded cheese.

Bake for approximately 45 minutes until cheese is melted well and bubbling.

This is the perfect "comfort" casserole. It is filling, feeds an army and is better the 2nd day. Refrigerate leftovers for up to one week or prep ahead and cook the next day or freeze for a quick meal.
