"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

2 large sweet potatoes
2 tsp. chili powder
2 tsp. minced garlic
½ tsp. salt
PAM cooking spray

Directions:
Directions:
Preheat oven to 425.
Cut sweet potatoes into ¼ inch thick “fries.”
Place in a bowl and spray them with PAM.
In small container, mix together the chili powder, garlic, and salt. Place the sweet potato sticks into a plastic bag and shake with spice mixture until coated. Spread in a single layer on jelly roll type pan. Bake for 25 minutes.

Personal Notes:
Personal Notes:
You may substitute paprika for the chili powder if you prefer. I sometimes use garlic powder instead of minced garlic and I will sometimes cut the sweet potatoes into steak fry size. (This may require longer cooking time. Test doneness with fork.)
