1/2 C. sugar 2 tsp. baking powder
1/2 C. shortening 1/2 tsp. soda
1 egg (well-beaten) 1/2 tsp. salt
1/3 C. molasses 1 tsp. ginger
1/2 C. buttermilk 1 tsp. vanilla
3 1/2 C. sifted flour
Thick applesauce or cooked dried apples

Directions:
Directions:
Cream sugar and shortening. Add egg, molasses, and buttermilk. Mix well. Sift flour, baking powder, salt, soda, and ginger together. Add to shortening mixture. Mix well and add vanilla. Divide into 5-6 balls. Roll out as for pastry and cut to fit 9-inch cake pan or skillet. Bake in 350 oven for 10-12 minutes. When cool stack with applesauce or old-fashioned dried apples which have been cooked down until thick and sweetened to taste.
