2 1/2 C All purpose flour
1 C buttermilk
1/4 C maraschino cherry juice
1/2 C granulated sugar
1/2 C packed brown sugar
1/4 C shortening
2 eggs
3 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1 C chopped pecans
1/2 Cup chopped, drained maraschino cherries.

Directions:

Heat oven to 351º
Grease and flour 9x5x3 loaf pan. Beat all ingredients except cherries on low speed 15 seconds. Beat and additional 30 seconds scraping bowl constantly. Stir in cherries. Pour in pan and bake until a wooden toothpick inserted comes out clean. Approx. 70 to 75 minutes. Immediately remove from pan and cool completely. Best if stored at l;east 8 hours before slicing.
