1/2 lb red skin potatoes, thinly sliced
1 small red onion sliced
1 medium red or green bell pepper, cut into strips
1 tsp. vegetable oil
1/2 tsp. dried thyme crushed
1 tsp salt
1/4 tsp pepper
8 eggs slightly beaten
2 1/4 cups finely shredded parmesan and romano cheese

Preheat oven to 350º. In covered 12 inch ovenproof skillet over medium heat, cook potatoes, onion and peppers in oil until vegetables are tender, about 10 minutes, stir occasionally. Stir in thyme, salt and pepper. Blend eggs and 2 cups cheese together and pour over vegetables in skillet. cook until edges of eggs begin to set, about 4 minutes. Sprinkle remaining cheese over eggs and vegetables, place pan in oven and bake until set in center, about 8 minutes. Slide out of pan onto serving plate.
