1 15 oz pie refrigerated pie crust
1/2 cup finely chopped Canadian style bacon
1/2 cup shredded sharp cheddar cheese or Swiss cheese
1/4 cup sliced green onions
1 3 oz pkg cream cheese, softened
1/4 cup milk
2 eggs
1 T. chopped fresh sage or 1 tsp dried sage crushed
1 tsp salt
1/2 tsp ground pepper

Preheat oven to 450º. On a lightly floured surface roll pastry into a 12 inch square, cut into 4 4 inch squares and line 4 4 inch tart or quiche pans with the pastry, or line a 12 inch quiche or pie pan with the pastry. Line each pastry with a double layer of foil. Bake for 8 minutes. Remove foil bake for 4 to 5 minutes more or until dry. Remove from oven and reduce temperature to 325º. Sprinkle bacon, cheese, and onions in pastry, Set aside. In a medium bowl beat cram cheese with an electric mixer on medium speed until light and fluffy, Gradually beat in milk, add eggs. Beat on low speed until combined. Stir in sage, salt, and pepper. Pour over meat and cheese in prepared crust. Bake for 15 to 20 minutes or until a knife inserted near center comes out clean.
