1/2 c. packed brown sugar
1/2 c. sugar
3/4 c. margarine, softened
1 3/4 c. flour*
1 1/2 tsp. soda
1 tsp. cinnamon
1/2 tsp. nutmeg
2 eggs
1 tsp. vanilla
2 c. shredded zucchini
1 c. chopped nuts
1/2 c. coconut, if desired

Directions:

Mix together dry ingredients. Set aside. Grease 15x10 inch jelly roll pan. Heat oven to 350º F. Cream sugars and margarine. Beat in eggs and vanilla. Add dry ingredients. Mix well. Add zucchini and coconut. Spread dough evenly into prepared pan. Bake 30 to 35 minutes. Cool. Sprinkle with powdered sugar or frost if desired.
*Note substitute 1/2 c whole wheat flour for 1/2 c. flour.
