1 c chopped dates softened in 1 c hot water
3/4 c sugar (1/2 c white sugar/ 1/4 c brown)
1/2 c butter
1 tsp vanilla
1 tsp lemon juice
1 egg
1/2 tsp salt
2 c flour
1 tsp baking soda dissolved in 1/4 c hot water (or 1 tbsp baking powder sifted into flour).
1/2 c chopped nuts

Preheat oven to 335º.

Pour 1 cup hot water over chopped dates and set aside to soften.

Cream butter and sugar; add egg and mix well; add baking soda, dry ingredients then vanilla. Mix well.

Mix in flour then date mixture in 2 separate additions; mix well.

Toss nuts in 1 tbsp flour; stir into batter.

Bake in buttered and floured loaf pan approximately 45 minutes to 1 hour, or till pick inserted comes out clean.
