8 oz. white mushrooms
16 oz. brown mushrooms
1 large onion
4 cups chicken broth
6 Tblsp. butter
6 Tblsp. white flour
1 cup milk
3 cups half-and-half
2 tsp. salt
1/4 tsp. pepper
2 Tblsp. cream sherry

Directions:
Directions:
Process mushrooms and onion in food processor until finely chopped. Combine with the broth in a large saucepan and simmer for 15 minutes. While it is simmering, melt the butter in a medium pan and stir in flour. Cook for 2 minutes, whisking constantly. Whisk in the milk gradually and cook for 2 minutes or until thickened, whisking constantly. Stir in the half-and-half and let thicken slightly. Add to the mushroom mixture. Season with salt and pepper. Add the sherry and cook just until heated through. Serve
