Potatoes and Green Beans with Basil Vinaigrette Recipe

4 lbs of potatoes quartered and roasted
2 lbs of green beans blanched
3/4 lb olives
1 red onion sliced and soaked in water for 15 minutes

Basil Vinaigrette
1 c. basil chopped and packed well
1 t. garlic
1/3 c red vinegar
2 T Dijon mustard
1 1/2 t, salt
1 1/3 c. canola oil
blend all of the above in a blender

t is IMPORTANT that the potatoes be mixed with the vinaigrette while still hot.

Toss the ingredients together and dress lightly
