1 2/3 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/8 tsp. cinnamon or nutmeg
1/3 c. shortening
3/4 c. milk
1 egg
apricot jam, or flavor desired
chopped nuts (optional)

Directions:
Directions:
Combine dry ingredients. Cut in shortening until particles are fine. Add milk and egg; mix just until blended. Spoon into greased muffin cups. Place 1 tsp. jam on top of each muffin, pressing into batter slightly. Sprinkle with nuts, if desired. Bake at 400º for 20-25 min. until tops spring back when lightly touched. Serve warm. 12 muffins
