2 Giant Cans and 1 Large Can Sweet Potatoes
2 cups brown sugar
3 eggs
2 teaspoons Vanilla
1 tablespoon Cinnamon
1/2 LB. butter
1 bag of mini marshmallows
1 small box of Kellogg's Corn Flakes© (Crushed)

Heat potatoes in their liquid in a large pot on the stovetop. Bring to a boil but don't cook long....this is mostly to just heat them through. Drain them and then add all the other ingredients. You can mix with a mixer or by hand. Refrigerate and let the mixture get very cold. Make palm sized "balls" (flat patty type shapes). Squish 3 to 4 mini marshmallows into each "ball" in the center. Roll in crushed Corn Flakes. Put wax paper on a cookie sheet and place the forms on the sheet kind of spaced apart as you would cookies. Freeze them this way for several hours. When they are hard, remove them from the cookie sheets and place in ziploc bags by the # you think you will use at a future meal. Or, you can leave them on the baking sheet covered with foil for a few days until you use all of them for a big gathering, such as at Thanksgiving.

When ready to bake, set frozen "balls" out for about 20 minutes to thaw some before baking. Bake at 350º for about 15 minutes or until heated through.

Makes about 20 depending on the size.
