1/4 c. soy sauce
1/4 c. white cooking wine
1 T. sugar
1 T. cornstarch
2 T. peanut oil
3 chicken breasts, boned and sliced thin
1 lb. cooked ham, cubed thinly
3 c. diagonally sliced celery
3 green onions with tops chopped
1/3 c. slivered almonds

Directions:
Combine soy sauce, wine, sugar and cornstarch to make sauce. Pour oil in wok and preheat to 375º. Add chicken and cook for 4-5 min. Add ham and cook for 2-3 min.; then celery for 2 min.; finally onions for 1 min. Remove food from wok to keep it firmer. Combine everything, add sauce and mix well. Simmer til warm through. Sprinkle with almonds. This is a rich dish. (More oil will be needed if food is removed during cooking.)
