1/3 c. butter

1/2 lb. large fresh mushrooms, sliced thin (about 4 c.)
1 bunch (9-12) or 2 c. green onions cut in 1" pieces (use all of onion)
1 c. thinly sliced Spanish onion
2 lbs. beef (steak or good roast), sliced into 2" thin strips
1 c. celery, diagonally cut
1 (10 oz.) pkg. fresh spinach, torn into lg. pieces (6 c.)

Melt butter at 350º in wok. Cook ingredients in order as listed for 2 min. each, stir-frying all of them except the spinach which is simply covered. May need more butter. Added ingredients such as bamboo shoots or water chestnuts are good.
