2 cups all purpose flour
2 cups granulated sugar
2 teaspoons baking soda
2 eggs, lightly beaten
1 can (20 ounces) crushed pineapple
1 cup shredded coconut
1 cup coarsely chopped pecans

Frosting:
1/2 cup unsalted butter, softened
4 ounces cream cheese, softened
2 cups confectioners sugar
t tsp. vanilla

Directions:
Directions:
Preheat oven: 350º
Coat a 9 x 13 pan with non-stick spray.
In a large bowl, stir together all the above ingredients. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
Cool completely.

Frosting;
Cream butter and cream cheese until smooth. Gradually beat in confectioners sugar and vanilla until smooth. Frost cooled cake and garnish with chopped nuts, if desired.
