3 large baking potatoes, sliced into ¼” thick rounds
3 Tbsp. olive oil
Salt and pepper
¾ lb. ground beef
1 can black beans, rinsed
2 – 3 Tbsp. taco seasoning
2 c. shredded cheddar cheese
1 c. grape tomatoes, cut in half
Shredded lettuce
Sour cream

Directions:
Directions:
Preheat oven to 450 degrees. On a large, rimmed baking sheet toss the potatoes with olive oil, season with salt and pepper and arrange in a single layer. Bake until golden, about 20 minutes.
Brown ground beef, drain. Add black beans and taco seasoning and 2 Tbsp. water. Simmer for a few minutes. Spread ground beef on top of potatoes. Top with cheddar cheese. Place in oven and turn off heat. Let stand for 3 minutes. Top with tomatoes and lettuce. Serve with sour cream.
