3 overripe bananas
1-1/4 c. sugar
1/2 c. butter, melted and slightly cooled
2 eggs, at room temperature
1 tsp. vanilla
1-1/2 c. flour
1/2 tsp. salt
1-1/2 tsp. baking soda
1/2 c. chopped toasted walnuts

Directions:
Directions:
Beat together bananas and sugar for 2 to 3 minutes. Add butter, eggs and vanilla, whipping well and scraping down sides of bowl after each addition. Sift together flour, salt and baking soda and add nuts. Add dry ingredients to wet ingredients and mix just until combined. Pour into greased 9x5-inch loaf pan and bake at 350 F for about 1 hour or until golden brown and firm in the center. May have to cover with foil during last few minutes to prevent overbrowning. For mini-loaves, bake 45-50 minutes. For muffins, bake 15 minutes.

I think the toasted walnuts make this so good. I usually make into mini-loaves so I can give some away.
