1 1/2 c. flour
1/3 c. oil
2 1/2 tsp. baking powder
2 eggs
1/4 tsp. salt
1 tsp. vanilla
1 c. oat bran
3 oz. cream cheese
1/2 c. brown sugar
3/4 c. apricot jam
1 c. milk

Directions:
Directions:
Combine the milk, oil, eggs, and vanilla. Add the dry ingredients just till moistened. Cut cream cheese into 12 pieces. Spoon 1/2 the batter into prepared muffin cups, filling about 1/3 full. Spoon 1 TB of jam over top, then top with 1 piece of cream cheese. Spoon remaining batter over. Bake @ 350º for 20-25 minutes.

This can be low in fat and good for you if you use applesauce instead of oil, and lowfat cream cheese. Oat Bran is found by the hot cereals. This is also equally good with out the cream cheese for those who do not love cream cheese (mom:). This will fill the muffin cup very full, but they really do not rise a ton, but I still put a pan under just in case, and it makes more than 12.
