2 tsp. worchestershire sauce
1 TB. oil
2 tsp. soy sauce
1 lg. onion, sliced
2 tsp. vinegar
1 lg. gr. pepper, sliced
1 tsp. chili powder
2 chicken breasts, cut into strips
1/2 tsp. garlic powder
1/2 c. quacomole
dash of cayenne
chopped lettuce

Combine marinade ingredients. Add veggies and chicken- marinate for 1/2 hour. Warm corn or flour tortillas in foil for 10 min. Meanwhile, heat oil and saute veggies first, and then add chicken after 5 min. Add the marinade to the pan. Cook hot and fast but do not over cook the chicken strips. Assemble and serve with guacomole and lettuce.

I like this recipe because it does not rely on having a packet of Fajita mix in the house. I got this recipe out of a cook book I bought for Susan called "Help! My Apartment Has a Kitchen!" You can use any leftover vegetables in this OR you can use leftover Fajitas to make a chicken grinder sandwich. Just put the fajita mixture on the bottom of a french loaf that has been cut in half, add mozzerella cheese and broil til melted. Spread mayo on the top piece of bread add lettuce and voila` you have a grinder sandwich like Mancino's (kind of)!!
