Notes: I like this recipe because it does not rely on having a packet of Fajita mix in the house. I got this recipe out of a cook book I bought for Susan called "Help! My Apartment Has a Kitchen!" You can use any leftover vegetables in this OR you can use leftover Fajitas to make a chicken grinder sandwich. Just put the fajita mixture on the bottom of a french loaf that has been cut in half, add mozzerella cheese and broil til melted. Spread mayo on the top piece of bread add lettuce and voila` you have a grinder sandwich like Mancino's (kind of)!!
