10 lbs potatoes
1 "blue" box American cheese
2 bunches green onions
1 cube butter

Directions:
Directions:
Boil potatoes until almost done. Drain and cool. Peel and cut potatoes into cubes. Place cubed potatoes in a 9x12 baking dish.

Grate cheese and place on top of the potatoes. Chop onions and sprinkle on top of cheese. Cut butter into chunks and scatter on top.

Cover with foil and Bake @ 350º for one hour.

Don't substitute cheese - the blue box of American cheese melts the best!

Leftovers are great the next day for breakfast. Heat skillet and add potato mixture. When potatoes are hot, add scrambled eggs, mix and cook until eggs are done.

“Blue” cheese box may not be available. If not, use grated American cheese. It melts the best and is the creamiest.
