Hotcakes:
2 c. whole wheat flour
4 tsp. baking powder
¼ tsp. salt
2/3 c. old fashioned rolled oats
8 tsp. sugar (I omit)
4 large eggs, lightly beaten
1 1/3 c. milk

Blueberry Sauce:
3 c. fresh blueberries
Grated zest and juice of ½ a lemon
2 tsp. sugar (can use agave nectar or honey)
2 tsp. corn starch

6 T plain yogurt

Directions:
Directions:
Mix hotcake ingredients well and set aside before frying so as to prepare blueberry sauce. When ready, prepare on griddle as any traditional pancake. These will be denser and rise a bit more than a traditional thin pancake.

Blueberry Sauce: Place first three ingredients in medium sauce pan. Bring to a simmer over low heat and cook for 5 minutes, stirring occationally. Stir together corn starch and 2 tsp. water in a small bowl. Add to blueberry mixture, stirring constantly until thickened.

When hotcakes are done, serve a stack of 4, topped with generous blueberry sauce and 1-2 Tbsp. of yogurt. Delicious and healthy!
