2 onions, sliced
6 slices of bacon, cooked, opt.
1 c. cooked brown or white rice
1/2 tsp. chili powder
1 c. chicken broth
salt & pepper to taste
1 c. tomato sauce
10 oz. can olives, black or green
14 oz. can diced tomatoes
10 oz. can corn, drained
2 green peppers, diced

Saute onion in olive oil or bacon fat if you're using bacon. Stir in rice and cook it until lightly browned- 5 minutes. Pour in chicken broth and tomato sauce. Add tomatoes, peppers and bacon. Season with chili powder, salt and pepper. Cover and cook 35-40 minutes. Stir in sliced olives and corn.
