olive oil
1-16 oz. cottage cheese
3 c. mushrooms
4 c. hot cooked penne pasta
1 c. chopped onion
2 c. shredded chicken
1 c. red pepper
1 c. cheddar cheese
3 c. fresh spinach
1/2 c. fresh Parmesan cheese
1 tsp. oregano
1/2 c. milk
pepper
1-10 oz. cream of chicken soup

Directions:
Preheat oven to 425º. Saute mushrooms, onions, and peppers in olive oil. Add spinach, oregano, pepper, until spinach wilts. Food process cottage cheese until smooth (I sometimes skip this step). Combine spinach mix, cottage cheese, pasta, chicken, 3/4 c cheddar, 1/4 c Parmesan, milk and soup in a large bowl. Spray a 2 qt. baking dish and spoon in mixture. Sprinkle with remaining cheese. Bake for 25 minutes.
