Small young beets cooked and peeled.
Syrup: 2c.sugar, 4c. water, 2c. vinegar. Make a spice bag with 1 tsp. cloves, 2 tsps allspice, 1 tsp cinnamon (or sticks cut up). Put in syrup.
Heat syrup to boiling.
Fill jars with beets; pour hot syrup over beets and seal.
This makes 3 pints - double syrup for 6 pints.

º This is really very easy to make. Be sure to sterilize jars before adding beets and syrup.
