Caesar Dressing:
1 c. mayonnaise
3 Tbsp. fresh lemon juice
tsp. minced garlic
1 tsp. Dijon mustard
tsp. freshly ground pepper

8 c. shredded cabbage
2 c. shredded carrots
4 scallions, thinly sliced
2 c. croutons

Make the dressing in a large serving bowl. Whisk together the mayo, lemon juice, garlic, mustard, and pepper. Add the cabbage, carrots, and scallions to the bowl and toss to coat. Cover and refrigerate the salad until ready to serve. Top with croutons. Serves 6 8.
