1 1/4 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 cup (2 sticks) butter, softened
3/4 cup light brown sugar, firmly packed
3/4 cup granulated sugar
2 eggs
1 tsp. vanilla extract
3 cups Old-fashioned oats
11 oz. package of butterscotch morsels

Preheat oven to 375º

Combine flour, baking soda, salt, cinnamon in a bowl and set aside.

Beat butter, brown sugar, and granulated sugar. Beat in the eggs, one at a time. Add the vanilla extract.

Slowly beat in the flour mixture (I prefer to stir the flour in by hand rather than with the mixer).

Stir in the oats and the butterscotch morsels.

Drop rounded tablespoonfuls onto an ungreased baking sheet and bake for 7-8 minutes for chewy cookies and 9-10 minutes for crispy ones.

Cool on baking sheet for 2 minutes then transfer to a wire rack to cool.

I was introduced to these cookies by my girlfriend Maig and they have quickly climbed my list of favorites! They are best right out of the oven but you can also heat them in the microwave and serve them with milk for a fantastic treat! Yum! :)
