3 pounds ripe tomatoes (or 1 large can, diced)
1/2 cup slivered fresh basil leaves
2 T olive oil
1 clove garlic, minced
1 tsp kosher or sea salt
Fresh ground pepper
1 can (15 oz) white beans, drained and rinsed
8 oz fresh mozzarella cheese, drained & cubed
1/2 cup freshly grated Parmesan cheese

Core and dice tomatoes. In a 4 or 5 quart pan, combine tomatoes, basil, olive oil, garlic, beans, salt and pepper. Let stand for 30 to 40 minutes. Set pan over medium-low heat, stirring occasionally until mixture is warm to touch. Add mozzarella and Parmesan. Gently stir just until mozzarella has softened and starts to melt into strings. Taste and stir in more salt and pepper if desired. Spoon stew into bowls and top with grated Parmesan and chopped basil.
