1/4 cup corn or canola oil
1/2 tsp. paprika
1 c. dry bread crumbs
1/4 tsp. salt
1/4 c. grated Parmesan cheese
1/2 c. flour
1/2 tsp. garlic powder
2 lg. eggs
1/2 tsp. black pepper
5 filets of Tilapia

Heat oven to 450º Spread oil on a rimmed cookie sheet. Toss crumbs, cheese and seasonings together in a shallow dish until blended. In another bowl put flour. In a third bowl put beaten eggs. Then dip each filet into flour, then eggs and finally the crumb mixture. Place each piece on the coated cookie sheet, turn pieces over so both are coated with oil. Bake 10-14 minutes and serve with a lemon wedge.
