3 lbs. squash
1/2 tsp. ginger
8 carrots, peeled, thick sliced
1/2 c. whipping cream
2 1/2 c. chicken broth
2 TB. chopped pecans, toasted
1/2 tsp. salt
nutmeg (optional)

Directions:
Directions:
Cut squash in half. Clean it. Put in cut side down on a jelly roll pan. Steam/cook carrots. Combine the two and mash them. Add broth and next three ingredients. Process or blend 1/2 of mixture until smooth. Repeat with the rest of the mixture. Place pureed mixture in a large sauce pan, bring to a simmer. Stir in cream, return to simmer. Sprinkle with pecans and nutmeg.
