1/2 cup unsalted butter -- melted and slightly
cooled (about 5 minutes)
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups bread flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup rolled oats
1/2 cup finely chopped -- toasted pecan pieces
1 cup dark chocolate chunks (or semisweet chunks)

Directions:

Preheat oven to 350 degrees F. Line cookie sheets with parchment.

In a medium bowl, stir (by hand) butter, brown sugar and white sugar until smooth. Stir in the egg and vanilla, being careful not to overbeat.

Mix together the bread flour, baking powder, baking soda and salt and stir into sugar mixture. Stir in oats, pecans and finally, chocolate chunks.

Chill dough for at least one hour.

Drop by packed quarter cupfuls onto the prepared cookie sheets.

Bake for 15 minutes. Remove from baking sheets to cool on wire racks. Let cool completely

I love chocolate chip cookies, and I've tried quite a few recipes. This is one of my favorites. They're excellent, huge, thick, crisp outside and chewy inside cookies. I leave out the nuts and use regular chocolate chips, as that's what I usually have on-hand. Also, these aren't really "oaty," in fact, you can barely tell the oats are there. Fabulous cookies on their own but also my go-to cookie for serving with ice cream. Great cookie.
