Orzo with Everything Recipe

1 c. uncooked orzo
c. oil-packed sun-dried tomatoes, drained and chopped
5 Tbsp. extra-virgin olive oil
c. red balsamic vinegar
c. chopped kalamata olives
1 c. finely chopped radicchio
c. pine nuts, lightly toasted
c. chopped fresh basil
c. freshly grated parmesan cheese
1 c. crumbled feta cheese
2 large garlic cloves, crushed
Salt and pepper to taste

Cook the pasta al dente; drain. Combine with the tomatoes, oil, vinegar, and olives in a large bowl and mix well. Let stand until pasta cools. Add radicchio, pine nuts, basil, cheeses, and garlic. Season with salt and pepper and toss. Chill, covered, until serving time.
