2 cups Panko (Japanese-style bread crumbs)
1/4 tsp cayenne (use less if you don't want spicy)
1 cup lowfat buttermilk
2 tbs and 1 1/2 cup all-purpose flour, divided
1/2 tsp salt
1/4 tsp fresh ground black pepper
1-2 large Vidalia onions, peeled

Preheat the oven to 450º F. Spray a baking sheet with cooking spray. Combine Panko bread crumbs and cayenne in a bowl and set aside. In another bowl, combine buttermilk, 2 tbs of flour, salt and pepper and set aside. Slice onions into 12-inch circles and separate rings, using only large and medium, whole rings (about 15 rings).

Place the 1/2 cup flour in a sealable plastic bag, add onions, and shake to coat. Dip onions 1 at a time into the buttermilk mixture, then dip into the breadcrumbs and place on baking sheet. Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp and golden brown. Season with salt to taste and serve immediately.
