1tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/2 cup shortening
1 1/2 c sugar
1 tsp. vanilla
2 eggs, well beaten
1 c sour milk

Filling:
1/3 c flour
1 c sugar
2 eggs, beaten
1 tbsp. butter
2 tsp. vanilla
pinch of salt
bananas

Cake:
Sift the flour once; then measure and mix with baking soda, baking powder, and salt; then sift again. Cream shortening, add sugar gradually, beating thoroughly after each addition. Add vanilla, then the well-beaten eggs; beat until fluffy. Add the flour mixture alternately with the sour milk. Beat until well blended. Pour into three 8 inch or 2 nine inch greased and floured pans. Bake at 350 º for 30-35 minutes.

Filling:
Mix the sugar, flour, and salt. Add the well-beaten eggs and milk. Cook in a double boiler until thick. Remove from heat and stir in butter and vanilla. Stir until cook and spread between the cake layers; slice bananas over the filling after spreading on each layer. Top the cake with more filling and sliced bananas. (Hint: dip the sliced bananas in lemon or orange juice to prevent discoloring.)

This is an old recipe. Not many of us having double-boilers these days. You and cook the filling in the microwave; but be careful to not over cook.
