3 1/2 c. flour
2 1/3 c. oatmeal
1 3/4 tsp. baking soda
2 1/2 tsp. ground cinnamon
1 1/2 tsp. salt
3 1/2 sticks of butter (softened)
1 3/4 c. sugar
1 3/4 c. brown sugar
1 can (15oz.) Libby's pumpkin
2 large eggs
1 3/4 tsp. vanilla
1 1/3 c. chopped walnuts
1 1/2 c. white or golden raisins

Directions:
Directions:
Mix thoroughly flour, oats, baking soda, cinnamon and salt in a medium sized bowl and set aside. Beat softened butter, sugar and brown sugar until light and fluffy (approximately 2-3 minutes). Add pumpkin, eggs & extract. Mix well. Gradually add flour. Stir in nuts and raisins. Drop dough onto greased baking sheet; spread dough lightly with a spoon to form 2-3" circles

Bake at 350 degree oven for 14-16 minutes or until firm and lightly browned.

Cool 1 minute. Transfer to cooling rack. Cool completely. Transfer to was paper for storage. Makes 4 dozen cookies.
