4 lbs. beef bottom round
3 T. liquid smoke
1 tsp. celery seeds
1 tsp. onion powder
1/2 tsp. pepper
4 garlic cloves, minced
1 tsp. salt
2 c. chopped onion
3/4 c. chopped green bell pepper (1 medium)
2 T. oil
1 - 8 oz. can tomato sauce
1 6 oz. can tomato paste
3/4 c. red wine vinegar
1/2 c. packed brown sugar
1/2 tsp. dried thyme
1 tsp. dried basil
4 drops of Tabasco sauce

Directions:
Place beef in roasting pan. Pour liquid smoke over both sides of the beef. Marinate covered in refrigerator 1-2 hours. Sprinkle with celery seeds, onion powder, salt and pepper. Bake covered at 300º for about 3 hours. Remove meat from juice and reserve 1/2 cup of juice. Cool meat; wrap in foil and refrigerate several hours or overnight.
Saute' garlic, onion and peppers in oil until tender. Add reserved cooking liquid and remaining ingredients. Simmer sauce 20-25 minutes. Cool.
To assemble: Cut meat into slices. Alternate slices and sauce in large oven-proof container and refrigerate. Bake at 325º, uncovered until meat is bubbling in center, 60 + minutes. Spoon into small buns for serving.
