4-6 pork chops
flour, salt, pepper
4 tbsp. butter
2 tbsp. green onions
1/2 lb. thinly sliced mushrooms
2 tbsp. warm cognac or brandy
2 tbsp. Dijon mustard
3/4 cup cream

Directions:
Directions:
Sprinkle the chops with salt and pepper and dredge them lightly with flour. Heat 4 tbsp. butter in large skillet and brown the chops well on all sides. Sprinkle with onions and mushrooms and cover. Cook 5 minutes and turn the chops. Sprinkle with brandy and stir in the mustard and cream. Cover and simmer for 30 minutes.
