5 1/2 cups high gluten BREAD flour
5 cups whole wheat flour
1/2 cup sugar
1 T salt
1/3 cup oil
3 heaped/rounded tablespoons SAF instant yeast
3 cups hot tap water
1 cup applesauce

Directions:
Directions:
Mix dry ingredients. Add oil, applesauce and water. MIx with dough hook for one minute and check consistency. If dough is too dry add a few tablespoons of water. If dough is too moist add a few tablespoons of flour. Knead in mixer or by hand 10 minutes. Turn on oven to 350º, Form loaves, place in loaf pans, raise on top of oven for 25 minutes. Bake at 350º for 25 minutes. Let cool for 5 minutes then turn loaves out of pans to cool on their sides.

Wow, this bread is good! And FAST! Now I make bread all the time. The dough is good for cinnamon rolls, dinner rolls, and breadsticks too.
