1/2 pkg dry yeast
1 cup lukewarm water
1 cup flour

Use a glass jar or crock large enough for mixture to double. Dissolve yeast in water and let sit for 15 minutes. Add flour and mix. Let sit at room temperature 2 to 5 days until it is bubbly and sour smelling. Stir well and refrigerate.

Use sourdough at least once a week. To replenish starter, add equal amounts of flour and warm water and let sit on counter until bubbly and sour-smelling.
