3 tbsp olive oil
1 tsp salt
1/2 tsp pepper
1 tsp apple pie spice ( or 1/4 tsp each cinnamon, ginger, allspice and nutmeg)
2 lbs pork tenderloin ( whole not sliced)
1 onion quartered and sliced thin
2 tart apples peeled, core and sliced thin
1/3 cup raisins or currant
2 tbsp brown sugar
1/2 tsp rosemary
2 tsp Dijon mustard
2 tbsp balsamic vinegar
4 tbsp apple cider

Preheat oven to 350 degrees.
In a large skillet, heat olive oil
season loin with salt, pepper, and apple pie seasoning, sear loin on all sides, about 5-7 minutes
remove from skillet and place in a roasting pan. turn heat to medium low. Add apples, onions, raisins, garlic, brown sugar, rosemary and vinegar to skillet. saute stirring occasionally, until onion are soft, about 4 minutes, stir in mustard and apple cider and simmer for 2 more minutes. spread mixture over roast and place in oven. bake for 30 minutes, let sit for 5 minutes. slice and spoon mixture over each serving.
