1 Boston Butt (the bigger the better)
1 tbsp. salt
1 tbsp. chipolte chile pepper
1 tbsp. cayenne pepper
1 tbsp. garlic powder
1 tbsp. paprika
1 tbsp. ground coriander

Directions:
Directions:
Combine all rub ingredients in a bowl and rub mixture over the entire surface of your butt (the Boston Butt). Place butt in shallow roasting pan, fat side up and put in center rack of 250º oven. Cook 8-10 hours or until the meat breaks apart. Let stand for 30 minutes and pull pork with 2 forks. Remove fat. Serve on or with white bread, buns and barbeque sauce.
