3 boneless, skinless chicken breasts cut in half
1 egg
1/2 cup bread crumbs
2 tablespoons Parmesan cheese
2 teaspoons dried oregano
2 teaspoons dried basil
2 tablespoons olive oil
1/2 cup grated mozzarella cheese
1/2 cup grated Parmesan cheese
1 large jar of your favorite tomato sauce

Preheat oven to 450º. Spray a 13x9 baking dish with cooking spray.. Blend egg and oil in a pie plate. Combine bread crumbs, 2 tablespoons of Parmesan, oregano and basil and a dash of salt and pepper in a bowl. Dip the chicken breasts into the egg mixture and then into the bread crumb mixture. Place in baking dish and bake for 8-10 minutes until golden brown. Do not turn the chicken. Remove chicken from oven and pour on your favorite tomato sauce. Layer with the mozzarella and Parmesan cheese. Return it to the oven and cook for another 5 minutes until the cheese is melted.
